5 dl milk

2 dl whipping cream

1 vanilla pod

1 dl granulated sugar

5 egg yolks

Prepare the vanilla bean : Cut the vanilla bean lengthwise and scrape out the seeds. Place both the seeds and the vanilla bean in a saucepan with the milk and whipping cream.

Heat the mixture : Heat the milk and cream mixture over medium heat until it almost starts to boil. Remove from heat and let stand for about 10 minutes.

Beat egg yolks and sugar : In a large bowl, beat the egg yolks and granulated sugar until the mixture is light and fluffy.

Mix together : Slowly pour the hot milk mixture over the egg yolk mixture, whisking constantly.

Prepare the sauce : Return the mixture to the saucepan and heat gently, stirring, until the sauce thickens and coats the back of a spoon. Do not let it boil, as this can make the sauce grainy.
