Vanilla dreams

Vanilla Dreams are classic, crispy and deliciously sweet cookies that melt in your mouth. Perfect with coffee or as a small sweet treat for celebrations. Here is a simple recipe for baking these heavenly cookies.

Ingredients

  • 100 g butter, room temperature

  • 3 dl granulated sugar

  • 1 tbsp vanilla sugar (preferably homemade)

  • 1 dl neutral oil (e.g. rapeseed oil)

  • 1 tsp antler salt

  • 4 dl wheat flour

Instructions
  1. Beat butter and sugar : In a large bowl, beat the room temperature butter and granulated sugar until white and fluffy. Add the vanilla sugar and beat for a few more seconds.

  2. Add oil : Pour in the oil in a thin stream while beating on low speed. This will make the batter light and smooth.

  3. Mix dry ingredients : In a separate bowl, sift together the flour and antler salt. Add the flour mixture to the butter mixture a little at a time, stirring gently until the dough just comes together.

  4. Shape the cookies : Roll the dough into small balls, about the size of walnuts, and place them on a baking sheet lined with parchment paper. Leave some space between each cookie as they will spread slightly during baking.

  5. Bake : Bake at 150°C for 15–18 minutes. The cookies should be light and barely browned. Remove from the oven and let cool on the baking sheet.

  6. Serve : Once the cookies have cooled completely, they are ready to enjoy. Store them in an airtight container to preserve their crispness.

Tip

  • The antler salt gives the cookies their characteristic crispness, but it can be replaced with baking powder if necessary (the taste will be slightly different, however).

  • If you want to vary the flavors, you can add a little grated lemon zest or replace some of the vanilla sugar with cardamom.
