Vanilla dreams
Vanilla Dreams are classic, crispy and deliciously sweet cookies that melt in your mouth. Perfect with coffee or as a small sweet treat for celebrations. Here is a simple recipe for baking these heavenly cookies.
Ingredients

100 g butter, room temperature

3 dl granulated sugar

1 tbsp vanilla sugar (preferably homemade)

1 dl neutral oil (e.g. rapeseed oil)

1 tsp antler salt

4 dl wheat flour

Beat butter and sugar : In a large bowl, beat the room temperature butter and granulated sugar until white and fluffy. Add the vanilla sugar and beat for a few more seconds.

Add oil : Pour in the oil in a thin stream while beating on low speed. This will make the batter light and smooth.

Mix dry ingredients : In a separate bowl, sift together the flour and antler salt. Add the flour mixture to the butter mixture a little at a time, stirring gently until the dough just comes together.

Shape the cookies : Roll the dough into small balls, about the size of walnuts, and place them on a baking sheet lined with parchment paper. Leave some space between each cookie as they will spread slightly during baking.

Bake : Bake at 150°C for 15–18 minutes. The cookies should be light and barely browned. Remove from the oven and let cool on the baking sheet.

Serve : Once the cookies have cooled completely, they are ready to enjoy. Store them in an airtight container to preserve their crispness.
Tip

The antler salt gives the cookies their characteristic crispness, but it can be replaced with baking powder if necessary (the taste will be slightly different, however).

If you want to vary the flavors, you can add a little grated lemon zest or replace some of the vanilla sugar with cardamom.
